If you would like a whole lamb you must let me know several ordering cycles in advance to confirm what cuts you want and to get on the list at the butcher.
Instead of ordering specific roasts and cuts several times a year this is a whole lamb prepared the way you want. e.g. Do you prefer rib chops or a rack or maybe one rack and the rest as chops? Do you like three quarter inch thick chops or one and a half inch chops?
June to October is the best time to order a whole lamb although it may be possible later.
A whole lamb weight is based on the hanging weight taken by the butcher and usually ranges from 35-50 lb
